I haven't posted any recipe since long on this blog, so when yesterday morning when I was preparing Plain Rava Idli for a Office PotLuck, I quickly took a few pictures so that I could share this easy recipe with you.
It's almost instant Idli with the cooking time of 7 minutes only for 12 fluffy Rava Idlis.
Ingredients:
1 Cup Rava / Sooji
Salt to taste
Some cumin seeds
1 sachet of Lemon Eno
3/4 cup curd
1 tsp oil
Idli stand and Steamer
Start off by adding salt and cumin seeds to Rava in a bowl. Add curd and mix well, set aside for 5 minutes.
Coat Idli moulds with oil lightly, so that the Idlis can be removed easily after they are cooked.
If you are steaming your Idlis in a pressure cooker / steamer, now would be a good time to keep some water for boiling in the cooker / steamer. I steam my Idlis in a 5L pressure cooker with the whistle taken off, else you can use a microwave for steaming your Idlis as well. It would take around 3 minutes for your Idlis to be ready.
Add the complete sachet of Eno to the Idli batter and mix well so that the batter rises evenly. Pour the batter into the moulds such that the mould is half filled of its capacity.
Place the Idli mould for steaming 7 minutes (cooker/steamer), or 3 minutes in microwave.
Remove from moulds and serve hot. Idlis are my all time favorites, I can have them for breakfast, lunch, dinner, or as a snack, so healthy and tasty.
Ideal accompaniments to these Idlis are coconut chutney and sambhar. Do give this recipe a try girls, you would sure like it.

Deletemy mil makes oh so soft rava idlis the same way... but i think she uses eating soda instead of eno..
