Hello People,
After an overdose of loads of mithais and heavy duty fried stuff, I decided to make something tasty yet not fried and heavy and I call this a easy Vegetable Biryani Recipe.
Let's see the ingredients first:
1 cup rice
1 finely chopped tomato
a few florets of cauliflower, finely chopped
2 green chillies, finely chopped
5-6 French beans, finely chopped
10-12 cashewnuts
a few strands of saffron soaked in 1/2 cup warm milk
2 bay leaves
3-4 cloves
a small stick of cinnamon
3-4 small cardamom
2 tsp of clarified butter / ghee
1 tsp cumin seeds
Salt to taste
Soaked washed rice in 2 1/2 cups water for 15-20 minutes.
Start by heating ghee in a pan and add cumin seeds. Cook till they turn brown
Add bay leaves, cinnamon stick, cardamoms, and cloves and saute till they are fragrant.
Add cashew nuts and saute till they are light brown in color.
Add French beans, green chillies and saute them lightly.
Add 2 1/2 cups of water, a little salt and let the mixture come to a boil.
Add the presoaked, drained rice to the pan and cover and cook for five minutes.
Next add saffron soaked in milk and stir lightly. Cover again and cook for another two minutes.
Add tomatoes and cauliflower to the pan, stir lightly and cover and cook till the rice is done.
Check the salt and add more as per your liking. Vegetable Biryani / Pulao is ready to be eaten. We generally eat it with Boondi Raita.

Deletenice recipe.. but this is pulav recipe, not biriyani.... :)
ReplyDeletebiriyani-the masala and rice is layered n rice gets cooked in that steam or rice is precooked n layered .. pulav the rice is boiled with the veggies... :)
